Instructions

  1. Prepare the Oreo Crust: Crush the Oreo cookies into fine crumbs, then mix with melted unsalted butter until the mixture resembles wet sand. Press evenly into the bottom of a lined baking pan to form a firm, chocolatey crust. Chill briefly while preparing the filling.
  2. Mix the Cheesecake Filling: Beat softened cream cheese in a large bowl until smooth. Add granulated sugar, eggs one at a time, sour cream, and vanilla extract, mixing thoroughly after each addition. Gently fold in the chopped fresh strawberries for bursts of juicy flavor throughout the filling.
  3. Assemble and Bake: Pour the cheesecake filling over the chilled Oreo crust and smooth the top with a spatula. Bake at 325°F (160°C) for 35–40 minutes, or until the edges are set but the center still jiggles slightly. Allow to cool completely in the pan, then refrigerate for at least 4 hours to fully set.
