Tofu Filling

  • 14 oz firm tofu, pressed and crumbled
  • 2 tbsp taco seasoning (chili powder, cumin, paprika, garlic powder)
  • 1 tbsp olive oil
  • Salt, to taste

Tortillas and Toppings

  • 8 corn or flour tortillas
  • 1 cup chopped tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup diced onions
  • 1 avocado or 1/2 cup guacamole
  • Lime wedges, for serving
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Press and Crumble the Tofu: Start by pressing the firm tofu to remove excess moisture. This helps it soak up spices better and crisp up nicely when cooked. Crumble the tofu into bite-sized pieces resembling ground meat.
  2. Season the Tofu: In a bowl, mix your crumbled tofu with taco seasoning, salt, and a drizzle of olive oil. Stir well to coat every piece evenly so that each bite bursts with flavor.
  3. Cook the Tofu: Heat olive oil in a non-stick pan over medium-high heat. Add the seasoned tofu and cook, stirring occasionally, until browned and slightly crispy, usually about 8 to 10 minutes.
  4. Prepare the Tortillas and Toppings: While the tofu cooks, warm your tortillas in a skillet or microwave. Chop your fresh vegetables and prepare garnishes like avocado slices and lime wedges.
  5. Assemble Your Tofu Tacos: Spoon the cooked tofu mixture onto each tortilla, then layer with veggies, avocado, cilantro, and a squeeze of lime. Serve immediately and enjoy the fresh combination of textures and tastes.
