Scale

Main Ingredients

  • 1 1/2 cups dried white beans (Cannellini or Great Northern), soaked and drained (or 2 cans white beans, rinsed and drained)
  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable or chicken broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 Parmesan rind (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Aromatics: Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery. Cook gently, stirring occasionally, until the vegetables are softened and fragrant, about 5 to 7 minutes. Stir in minced garlic and cook for an additional minute to release its aroma.
  2. Add Beans and Broth: Add the drained and rinsed white beans to the pot, then pour in the vegetable or chicken broth. If using, add the Parmesan rind to enhance richness. Bring the mixture to a gentle simmer.
  3. Season and Simmer: Add fresh rosemary and thyme sprigs, and season with salt and freshly ground black pepper. Let the soup simmer gently for 20 to 30 minutes to allow the flavors to meld and the herbs to infuse the broth.
  4. Finish and Garnish: Remove the herb sprigs and Parmesan rind from the soup. Taste and adjust seasoning as needed. Ladle the soup into bowls and garnish with chopped fresh parsley and a drizzle of good-quality olive oil before serving.

Notes

  • Use dried beans soaked overnight and cooked for best texture and flavor, though canned beans work as a time-saver.
  • Cook vegetables gently to build a deep aromatic base.
  • Add herbs early to develop full flavor infusion.
  • Save Parmesan rinds in your freezer for adding umami to soups and stews.
  • Adjust soup consistency by adding more broth or water if too thick.
